Hello friends!

I hope everyone had a great weekend! We were invited to Va Beach to stay at Patti and Ramsey’s parent’s beach house for the weekend It was awesome.  I didn’t take my camera with me, epic fail, but I managed to get a few snapshots from our weekend.

Friday after work we got a bit of a late start, but we dropped Ella off at Katie’s house (Thanks lovea for watching her) and ate our weight in pizza and wings before we hit the road. We left late enough that we didn’t hit ANY traffic, and we arrived at the beach house around 1am. We went straight to bed because we knew we wanted to get an early start on the beach the following day.

We spent a few hours at the beach before the thunder and lightening started rolling in, so we decided to cut our losses and head back to the house and go to the pool for a bit before lunch.  Lunch was amazing! I got a sweet BBQ chicken sandwich, oh my. The chicken was so unbelievably fresh, it was fantastic.

After lunch we went back to the house and played games until it was time to go to dinner.

For dinner I had the best salad I have ever had in my whole life. I’m not kidding

Thai chicken salad with cilantro-lime peanut dressing! This bowl was bigger than my head, no joke.  I cannot stop thinking about this salad, and I NEED to replicate it at home.

So if anyone has a cilantro-lime peanut dressing recipe they love and want the share, please please send it my way. I am desperate to make this salad at home!

Sunday was filled with more pool fun before we clean up the house and headed home.  The unfortunate part was the weather was terrible and it took us a good five hours to get home.  But we made it and were so pooped from the weekend we went to bed at nine last night! ha.
