Salad Success!

Hello Hello!

How is everyone today!?  Another rainy Wednesday here in Northern Va. but hey at least we are halfway through the week.

I’d like to share some recent eats 🙂

Monday I stopped off at Trader Joe’s, and I thought to myself I should really just change the name of my blog to “I love Trader Joe’s”.  And Monday night’s dinner did not disappoint.  We tried out a new frozen veggie

We paired that with the Trader Joe’s Pesto Genovese, and Mushroom and Herb Risotto.

okay, kind of weird, that piece of chicken looks like an outline of the United States!  Do you see it? Ha.

I also decided that I really needed to stop eating Smart One’s for lunch everyday, #1 they aren’t the most nutritious thing out there and #2 most of the meals are between 6-9 WW points.  WW recently reduced the number of points per day, and if I want to be able to enjoy my dinner, and possibly have a dessert (hello Oatmeal Cranberry Dunkers), then I need to make a salad for lunch.  I regularly fail at making salads, I can never replicate the salads from the Whole Foods Salad bar so I am always disappointed.  But not yesterday my friends.  Yesterday’s salad, and all future lunches, looked a little something like this

And it was AH-mazing!  I used some leftover chicken from Monday night and some Fat Free Balsamic Vinaigrette dressing.

Tonight I will be making healthier version of Baked Ziti, so watch out for that tomorrow.  For now here are a few more (some good som embarrassing) pictures from our weekend in Charlotte).

    Okay this is kind of creepy, but I know Erin (last name/maiden name Wallis) from your pictures! I went to highschool with her/played on the same soccer team, and was in band with her younger brother Sean…BIGGEST connection is that my younger sister dated her youngest brother Tyler for years. Kind of crazy that I clicked on your blog on Life of Blyss and saw Erin’s picture.

    I haven’t really been on the salad train lately. I’ve been liking just steamed veggies with some sauce or something. I think it’s because my at home salads are never really that great either!
