Mini Meatloaf! Liam approved!

I don’t know about you guys but my toddler has been a little picky lately when it comes to food. I think he is teething again, but still I love finding recipes that Erik and I love that Liam will also eat. I found this recipe in Parents magazine, and we love it. I added a few things and comments in red.

Mini Meat Loaves and Broccolini (we didn’t do the Broccolini part)

Active time: 20 minutes
Total time: 35 minutes (if you make the Broccolini)
Makes 4 Servings

3 tsp olive oil
1 lb lean ground beef
¼ cup plus 1 Tbs ketchup divided
1/3 cup plain breadcrumbs
2 eggs, beaten
2 Tbs. grated Parmesan Cheese
3 garlic cloves, crushed
1 lb broccolini, trimmed
¼ tsp salt
½ bell pepper (we used yellow)
2 tsp. garlic powder

Make it
1. Preheat oven to 375. Brush 8 cups of a standard size muffin pan with 1 tsp. oil. (I used a 12 cup muffin tin and sprayed 10 of them with cooking spray). In a large bowl, combine the meat, ¼ cup ketchup, breadcrumbs, eggs, garlic, red bell peppers and cheese. Divide mixture into the muffin cups. Evenly brush 1 Tbs. ketchup on the meat loves. Bake until meat loaves reach and internal temperature of 165 degrees, about 25 minutes.
2. In a medium skillet, heat 2 tsp. oil over medium heat. Add garlic and cook 30 seconds. Add broccolini and salt. Cook 4 minutes. Add ½ cup water. Cover and simmer over low heat until crisp-tender, about 6 minutes. Serve alongside meat loaves.


Like I said we didn’t make the broccolini, because, well frankly, it is pretty expensive. And we have a bunch of frozen veggies we use whenever we need a veggie side dish. You can use any veggies you want in the actual meat loaves themselves. We chose the red peppers, but I hear zucchini and mushrooms might be good. Play around with it; see what works for your family.
