New Finds

Hello friends!

After Monday night’s recipe FAILURE, I was still feeling a bit down after work, so I decided to stop off at Trader Joe’s on my way home to pick something up for dinner.  I’m not sure if all Trader Joe’s are the same, but ours has a little section in the back that has a free sample of something new everyday!  You know how much I love free samples.

Well yesterday they had this

I usually don’t buy prepackaged pulled pork, because it is always dry and never tastes like our homemade pulled pork, BUT omg this was amazing.  Honestly if you like pulled pork and are looking for a super easy meal you NEED to try this out.

I paired it with another new to me Trader Joe’s Product.. Onion Rings, also very good, and baked beans

Sorry for the horrible picture, I was hungry and didn’t take the time to make it look good before I dug in. In fact you are lucky I even remembered to take a picture before I finished it all, ha.

Tonight we are having dinner with some friends!! I can’t wait!

Too soon for hot chocolate?

Nah, I don’t think so!  It was a mini cup, which actually makes my hand look like a giant’s hand, but I digress. As I said yesterday it was raining, and although it wasn’t actually cold outside, it looked cold so I told myself it was ok to have hot chocolate. And I’m glad I did because it was very tasty.

Other than being on a crazy chocolate kick recently, I am totally obsessed with Edamame .. especially the frozen kind from Trader Joe’s:

And to be completely honest, if I had taken the entire bag to work I would have finished it, thank goodness for Ziploc baggies. This was the perfect mid-morning snack. When I got home from work, I had ever intention of doing Day 8 of my Jillian Michaels “Making the Cut” workout, but when I looked at the first move in the circuit I realized.. hmmm. this might not be for me right now:

Somehow I just don’t think this is physically possible for me to do right now.  I used to be able to do it…. but no thanks, I won’t even attempt it.  I think I will have to stick to the leg workouts in this book until after my surgery and 4 month recovery (BARF).

So instead of working out after work, I sat my but on the couch, had a teaspoon of peanut butter, and watched Cupcake Wars… Has anyone ever even heard of this show?! It is amazing. haha. I love food shows, and this one takes the cake.. haha get it? sorry…. Last night’s episode each team had to make a cupcake out of three different dishes, Shrimp gumbo, pulled pork with mashed potatoes and gravy,  and another dish I can’t remember.  I couldn’t even imagine of making a cupcake with pulled pork and mashed potatoes.. but they looked pretty darn tasty… I heart you Food Network!  I don’t think there is one show on that channel that isn’t amazing.

When Erik got home, we headed over to his parents house for dinner.  His dad made a really yummy German dish.

Please do not ask me what it was called because I have no idea… It was ham, sauerkraut, and German potatoes.  So good.  This picture is what was packed in Erik’s lunch for today, I forgot to take a pictures last night. German food isn’t exactly the prettiest food, but it sure is tasty!

We got back home pretty late last night, so we let Ella sleep in our room on her bed.  Thankfully she slept in her bed until about 5am-ish… when I woke up and she was whimpering like a baby (seriously it was so cute) in the middle of our bed.  She was definitely having a nightmare, poor baby.  AHH I just love her so much haha.  I obviously chose to sleep in again, instead of going to the gym.  My shoulder has really been bothering me all week, and I don’t really want to make it any worse. But I did start my morning off with a delish cereal combo with blueberries and 1/2 a banana…

Crazy storm and Pulled Pork

Hello blog friends! How is everyone doing, well I hope! We have been quite busy today, last night there was a crazy wind storm while we were sleeping and when we woke up this is what we found in our backyard:

Ella likes sticks as you can see, she was trying to help us clean up! Tomorrow is Erik’s birthday and we are having a big BBQ J.  For our BBQ we are making homemade pulled pork.  It is a recipe we got from one of Erik’s Coworkers and I hope it turns out as good as when we last tasted it.  With this particular recipe we made our own chili rub, which required us to buy dried chilies and bake them in the oven.  This is what the pork shoulder looked like after I applied the rub:

Haha, the rub smelled so good, I can’t wait to eat it.  We have to let it cook for 11 hours in the slow cooker, so this will require us to cook it overnight.   Tonight we are headed to Hyojon’s house for dinner and an outdoor movie.
