Hello friends!

As you can see I have been busy. ¬†After my site got hacked (again), I decided (with the help of my awesome coworker Tony), that I needed to change my hosting provider. It’s taken over a week to get things transferred over, and we had a lot of hiccups, but we are finally back up and running. When we moved my site over to the new hosting site, my themes and fonts didn’t transfer over, so I took this as an opportunity to give my blog a little face-lift. I wanted a cleaner look for it, so here is it. What do you all think?

It is not 100% done, and I might do some tweaking of the sidebars, but I love it.

Longest.Week.Ever

Hello friends!

Oh man, does anyone else feel like this week has been dragging?! ¬†It is only Wednesday, oy vay! Last night was our clean eating cooking night, and I was nervous once again because my track record hasn’t been great, BUT… this meal was aaaahmazing. ¬†No lies, the best homemade Chinese food dish I have ever made, sorry I forgot to take pictures. ¬†But I will share the recipe with youūüôā ¬†To make this meal even quicker than it already is, I used pre-cut frozen stir-fry veggies I had from Costco.

Sweet & Sour Chicken (via Clean Eating) Serves 6

Ingredients

  • 1/3 cup low-sodium soy sauce
  • 2 tbsp raw honey
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 tsp crushed red pepper flakes
  • 1 1/4 lb boneless, skinless chicken breasts (about 4 breasts), chopped into 1-inch pieces
  • 1 medium red bell pepper, cut into 1-inch chunks (about 1 cup)
  • 1 medium green bell pepper, cut into 1-inch chunks (about 1 cup)
  • 1 small yellow onion, chopped (about 3/4 cup)
  • 1/2 fresh pineapple, cut into 1-inch cubes (about 1 3/4 cups)
  • 12 sprigs fresh cilantro, chopped (about 1/4 cup)
  • 1 1/2 cups cooked brown rice, optional

Directions

  1. In a small bowl, whisk together soy sauce, honey, garlic, ginger and pepper flakes. Place chicken in a large shallow dish. Pour soy sauce mixture over chicken, tossing gently. Cover and refrigerate for at least 30 minutes or up to 8 hours.
  2. Heat a large nonstick skillet over medium-high heat. Add chicken and marinade and sauté for 5 minutes or until chicken is cooked through. Add bell peppers and onion and cook for 5 minutes or until vegetables are slightly tender. Add pineapple and cook for 2 more minutes. Sprinkle with cilantro and serve immediately over rice for a complete meal, if desired.

Nutrients per serving (1 1/4 cups chicken mixture; not including rice): Calories: 161, Total Fat: 1.5 g, Sat. Fat 0.25 g, Monounsaturated Fat: 0.25 g, Polyunsaturated Fat: 0.5 g, Carbs: 17 g, Fiber: 2 g, Sugars: 13 g, Protein: 21 g, Sodium: 404 mg, Cholesterol: 48 mg

This meal took a total of an hour to make, because I cut up the chicken and stuck it in the fridge as soon as I got home, then took it out about 30-45 minutes later to cook.  If you use the frozen veggies, make sure to take the chicken out of the pan, before you cook the veggies, then add the chicken back in once the veggies are tender.

Also I need some help from my runner friends. ¬†Is there a way to prevent my feet from getting blisters? ¬†I get them in the arch of my foot… I have the correct shoe, according to the folks at Pacers, so that isn’t the issue.. please help! I have a 3.5 mile run tomorrow and a 5 mile run on Saturday!!!

Back Up Plan

Hello friends!

How is everyone today!?  I hope everyone had a lovely evening, once again I used a Clean Eating recipe for dinner, and once again I was disappointed.

I know it looks good, but the steak (under all the sauce), was horrible. ¬†I marinated it with spices and red wine¬†vinegar¬†over night, and the vinegar was completely overpowering. ¬†I threw all of my steak away, which sucks because I really hate wasting food. ¬†The sauce was pretty good, it was a mixture of crushed tomatoes, fat free sour cream, garlic, onions, and Italian seasoning. ¬†Not a “do-it again” meal.

After talking it over with my hubby, I decided to change up my meal planning. ¬†Instead of trying a new recipe everyday, I will attempt a new recipe once a week. ¬†It’s common sense I know, why take the chance of being disappointed 5 times a week..oh well. I had planned on making 2 more recipes this week, but I will save them for the weeks to come. ¬†I realllllly need to go through my recipe “box/basket”¬†mess and organize it. ¬†I am just so lazy, haha, it is on my 101 list, so maybe I will tackle it this weekend.

This morning I decided to sleep in a bit, give my body some rest, and I am so glad I did. ¬†I am so sore from this week’s workouts, that if I had gotten up this morning to go to the gym it would have been a waste of time. ¬†But it is always good to have a back up plan.

Today was my rest day from running and Day 11- Shoulders/abs of Jamie Eason’s workout. ¬†We had bought a bunch of weights and a weight stand last year when we were doing P90x, and I utilized them today. ¬†Ella doesn’t like it when I work out at home though, she comes up and tries to lick my face when I am doing sit-ups, PAIN. ¬†But I am happy that I got my workout in for the day AND I got to sleep in, win win.

New Years “resolution-ers”

Hello friends!

The first day back in the office after working from home last week is horrible. ¬†The worst part… having to put on real clothes. ¬†I really loved working in my pjs all week, sigh, well its a good thing I like my coworkers.

Last night we stayed up until 11 playing Risk, our new favorite game, which meant that this morning when my alarm went off I was not in the mood to get up and work out. ¬†Today’s workout consists of a easy 2 mile run, and Day 9 of Jamie Eason’s workout- Back/Biceps. Tara asked me if I liked Jamie Eason’s workout, and I have to say, I really do love it. ¬†So far, the workouts have been on point, they do not drag out too long, and they use a variety of machines. ¬†I do however, think the 12 week workout plan would be more beneficial if I followed her diet plan, but I just cannot commit to it. ¬†It is really hard to be on a diet when you are cooking meals for a hubby that wants to eat more and gain more weight and muscle mass. ¬†We are on¬†opposite¬†sides of the food¬†spectrum¬†right now, so I have been trying to find meals that will satisfy both of our needs.

For example this week I will be making 4 meals from my new cookbook:

I will be reducing my portion sizes, because seriously, who gains 4 lbs when they are working out everyday. ¬†I just don’t get it. ¬†The only thing I can think of is that I have been eating bigger meals because I started lifting and running again. ¬†I need to balance out my metabolism right now. ¬†I am hoping my body will settle down and get back on track in the next few weeks, I really do not want to go on a diet to lose this weight. Ugh.

We will see what happens. ¬†Oh yes, I wanted to share this pet peeve of mine with you all to see if you felt the same way. I kinda sorta feel like a big B about feeling this way but I am irritated. ¬†So yesterday, Erik and I went to the gym later on in the ¬†day because we could, and when we got there the entire place was PACKED… In our gym we have around 20¬†treadmills, and every single one of them was occupied. Really people?! This happens every year, hundreds of people come into the gym when the new year starts and sign up for memberships. ¬†Then as the weeks go by, all the “New years resolution-ers” stop coming, and things go back to normal. ¬†I absolutely hate it. ¬†Who are you kidding? ¬†It sounds really mean, but it really bugs me. I am all for people getting in shape and living healthier lifestyles, but 98% of the people who sign up as a New years resolution stop going after the first month. ¬†Also please do not try and impress me by running hills at 5 mph only to stop after 30 seconds, your grunting is disgusting, and I do not want to be sprayed by your smelly smelly sweat during my run. ¬†I am mean and will give you dirty looks if you wipe your sweat in my general direction, barf. Oh ya and please do not come to the gym and workout with your hair down, tons of perfume, makeup, a polo and blue jeans.¬†Does anyone else feel this way?

Well that is my rant for the day, sorry if this was offensive to anyone, it is just how I feel.

NYE Pajama Party

Hello friends! Happy New Year! ¬†Have you taken a look at my 2011 flashback? ¬†2011 was a roller coaster of a year, and I am determined to make 2012 a much better oneūüôā.

One thing I forgot to mention was that this past Saturday was my long run day, 4 miles! ¬†That is the longest distance I have run since my 10k back at the end of October. To say I was nervous is quite an understatement, but with my awesome running buddy, my hubby, we did it! ¬†I finished 4 miles in 39:24ūüôā I am so proud of both of us! ¬†We are onto week 2 of half marathon training. Okie enough running talk for today, onto our wonderful New Year’s Eve party.

Our friends Patti and Ramsey hosting the New Years party this year, and our theme was pajamas!  And what a great idea it was.  I am not really into making a huge deal about New Years, I think its a bit overplayed, and I would much rather take it easy so I am not hungover the next day. The food was awesome:

Marzetti Simply Dressed Salad Dressing

I was so excited to have the opportunity to try Marzetti Simply Dressed Salad Dressing. ¬†I always have a hard time finding a salad dressing I actually like.¬† I love Ranch, seriously I do, but it is such a fatty dressing that recently I have been trying out different flavors.¬† I found this balsamic vinaigrette from Trader Joe’s which I love, but I knew I needed to find a variety of dressings I like, you know gotta keep it fresh.¬† So when I saw the opportunity to try out a new salad dressing I jumped on it.¬† I looked at their website and found that they have quite a variety of flavors, perfect for someone looking to change the taste of their salads.

I decided to try the¬†Pomegranate flavor and boy oh boy was it amazing! My friend Lejia and I decided we wanted to use it for its intended purpose, salad dressing.¬† At first we were bit skeptical as to whether or not the dressing would mix well with the shredded chicken and eggs, but we wanted to be adventurous so we gave it a go, and I am so glad we did.¬†It was light and quite flavorful. ¬†It was particularly good because the flavor was not overwhelming at all, a bit tart but sweet at the same time. ¬†Just delightful. ¬†Seriously look at how amazing this salad looks….

I used some shredded chicken, corn, cucumbers, and soft boiled eggs, and plan on having this same salad all next week for lunch at work. Yummy, just looking at it again makes me hungry.

I wanted to try the Strawberry¬†Poppy-seed¬†flavor, because currently I am¬†obsessed¬†with¬†poppy-seed¬†dressing, but our Giant didn’t have itūüė¶. sad. ¬†I wanted to put the strawberry poppy-seed one in a sandwich.¬† A few months ago I tried this pita sandwich at Pica Deli, which had a poppy-seed dressing and I have been looking to replicate it ever since.¬† Not this time.¬† Our Giant only had 5 flavors, totally disappointing.

I actually think I want to use this dressing as a sort for glaze sometime next week to put on top of some grilled chicken, they also have a Champagne flavor that I think might be a good as a light sauce for pasta, who knows. I will need to thicken the dressing if I want to use it as a glaze, but I think it will turn out nicely.

I also really like this dressing because I could pronounce all the ingredients in it.. win

WATER, SUGAR, CANOLA OIL, DISTILLED VINEGAR, POMEGRANATE JUICE CONCENTRATE, ORANGE JUICE CONCENTRATE, EXTRA VIRGIN OLIVE OIL, SEA SALT, XANTHAN GUM, NATURAL FLAVOR, FRUIT AND VEGETABLE JUICE ADDED FOR COLOR, SPICE.

Try it out, they are in the refrigerated salad section of your local grocery store.
