Quinoa Tabbouleh

But those are sunglasses, on my goofy face, and no I was not driving when I took this.  But I was in my car and I had all the windows down and my gigantic sunroof open:

It was a glorious afternoon, I even got to take Ella for a walk while I talked to Bethany on the phone.  I stopped off at the store to pick up a few things for dinner (I need to start planning our meals again, these grocery trips are getting out of hand).

Last night I made Quinoa Tabbouleh, and it was SO good!  And super easy to make, this is slightly modified version than the one I found online at allrecipes.com.

Quinoa Tabbouleh ( makes 4 servings)

1 cup quinoa

2 cups water

1/4 lemon Juice ( I used a fresh lemon)

3 Roma Tomatoes, diced

8-10 stalks of Green Onions, diced

1 cucumber, diced ( I used half of that gigantic one)

a dash a olive oil, salt and pepper

1/2 cup parsley, chopped

2 cloves garlic, minced

Directions:

1. Thoroughly wash the quinoa (most important step), then boil 2 cups of water and add quinoa.  Reduce heat and simmer for 15-20 minutes.  The Quinoa will become translucent and the little sprouts will come out. Remove from heat and let cool completely at room temperature.

2.  Meanwhile, chop and mix the remaining ingredients in a bowl.  Once the Quinoa has cooled mix in the veggies and serve!

Erik grilled up some fantastic chicken to go along with the Quinoa.  It was a perfect meal.  I had never made quinoa before and I was super nervous about this dish but am really glad it turned out so great.  I also didn’t realize that 1 cup of quinoa goes a LOOONGGG way, we have TONS of leftovers.
